Swig State Cider

So this semester has been nothing short of overwhelming. But, I knew that Fall in NY would not be complete without a hard cider. So, in honor of this momentous Election Day, Swig State Cider!

4.5 Gal of fresh pressed unpasteurized apple cider
Red Star dry wine yeast
2 lbs light brown sugar

I'll be flavoring the cider after I rack it. I'm hoping for some pumpkin spice but we'll see how sweet it turns out. I'm keeping a close eye on the gravity as to avoid the swill I made for my first cider.
